Billecart-Salmon Brut Sous Bois NV

Aromas of dried fruits, fresh citrus, and white stone fruit, coupled with notes of toast and butter. On the palate the cuvée is powerful with flavours of brioche and toffee with a brilliant acid structure. A great accompaniment for poultry and mushroom dishes.

Produced from equal parts Pinot Noir, Chardonnay, and Pinot Meunier. The cuvée is vinified and aged in oak barrels at a low temperature and allowed to undergo partial malolactic fermentation. 30-35% of the blend consists of reserve wines and it is aged on lees for a long 6-7 years prior to disgorgement.

Based in the town of Mareuil-sur-Aÿ, Billecart-Salmon is one of the most renowned and highly regarded Champagne houses today. It all started in 1818 when Nicolas François Billecart and Elisabeth Salmon were married, marking the creation of their Champagne house. Since then there has been over 7 generations dedicated to bringing exceptional cuvées to the world, and the house remains family owned to this day.
